An estimated 108 billion pounds of produce go to waste every year in the United States, including roughly 42 percent of it that never even makes it out of the field. And yet, the USDA estimates that 13.5 percent of U.S. households are food insecure. But, thanks to a group of Southern California college students who recognized the problem in 2020, food rescue missions are popping up all over the nation that are collecting countless millions of pounds of surplus food from farms and delivering it to food banks. Hungry people are being fed, and the farmers even get a tax break.
